Salsa Verde

Salsa de tomatillo

I love me a good salsa verde. To me, it walks the perfect balance of tangy and spicy. Especially good on hearty dishes like pork, the brightness of the salsa will elevate your whole dish.


Ingredients

1 1/2 lb tomatillos

2 JalapeƱo peppers | whole - adjust the amount to the desired spiciness

3 cloves garlic

1/2 cup white onion | roughly chopped

1/2 cup cilantro leaves

1 tablespoon fresh lime juice

Salt to taste


Instructions

Step 1

Turn your oven on to broil. Place the tomatillos and jalapenos on a sheet pan and broil for 5-7 minutes until nice and charred. Two minutes before the tomatillos are finished, go ahead and throw the garlic on the sheet pan.

Step 2

 Stem, seed, and roughly chop the charred jalapenos.

Step 3

Place the charred tomatillos, chopped jalapenos, garlic, onions, lime juice, and cilantro in a blender. Pulse thoroughly.

Step 4

Cool in the refrigerator.

Step 5

Once cool, season with salt. Taste, adjust any seasonings if necessary. Enjoy.
