Elderflower Fritter Recipe

Elderflower Fritters

Ingredients

Large heads of Elderflowers | freshly picked, stems attached
2 cups all-purpose flour
2 eggs
3/4 cup whole milk
2/3 cup beer
1/4 cup granulated sugar
1 tsp vanilla extract
1/2 tsp fine salt
2 1/2 cups oil, for frying the fritters | use vegetable or canola oil

For Serving
Powdered sugar for dusting
Honey for drizzling (a great time to try out this Fennel Seed Infused Honey)


Directions

Step 1

Mix the flour, eggs, milk, beer, sugar, vanilla extract, and salt in a bowl until it becomes a well-incorporated smooth batter. Cover and set aside to rest at room temperature for one hour.

Step 2

Heat the oil in a deep pan.

Step 3

Once to oil is hot enough to fry, using the stem as a handle, dip the flowers in the batter, carefully shake off any excess batter and fry in batches. Do not overcrowd the pan. Fry until the fritters become golden brown, approximately 2-3 minutes.

Step 4

Carefully remove the fritters and leave to drain on a paper towel.

Step 5

Dust lightly with the powdered sugar. Drizzle the honey across the top. Serve while still hot. Enjoy.
