Grilled Green Tomatoes Recipe

Grilled Green Tomatoes

I love the tomato season. Nothing beats a sun-ripe, juicy, delicious tomato fresh from the vine. However, not to be overlooked is the under-appreciated unripe green tomato. Fried up, grilled, baked, pickled… the list goes on…


Ingredients

Green tomatoes

a glug of olive oil

3 cloves garlic | crushed to a paste

salt | to taste

pepper | to taste

parmesan cheese | shaved

basil | chopped


Instructions

Step 1

Combine the garlic paste with a good glug of olive oil, mix well and let infuse.

Step 2

Preheat the grill. Meanwhile, slice the green tomatoes into nice thick slices. Season with salt and pepper.

Step 3

Grill your tomatoes. TIming will depend on how thick your slices are, but on average 3-5 minutes per side.

Step 4

Remove from the grill, top with parmesan cheese, chopped basil, and a drizzle of the olive oil garlic mixture. Serve. Enjoy.
