Sautéed Cucumbers with Shallots Recipe

Sautéed Cucumbers with Shallots

Here is an unexpected recipe. Cooked cucumbers - who knew? Give it a try, you might just become a fan.


Ingredients

1 lb cucumbers

3 tablespoons butter

1 small shallot | peeled and sliced

a pinch of salt

a handful of fresh herbs


Instructions

Step 1

Cut off the ends of each cucumber, and cut the cucumber in half from top to bottom. If the cucumbers have seeds, and that bothers you, you can remove the seeds using a spoon. Now, slice the cucumber into irregular ½- to ¾-inch chunks.

Step 2

Melt the butter over medium heat in a large skillet. Add the shallot and cook until tender and translucent.

Step 3

Add the cucumber and the pinch of salt to the pan. Stir frequently cooking until the cucumber has begun to soften slightly.

Step 4

Once the cucumber is soft but still slightly crunchy, add your herbs and toss. Serve immediately. Enjoy.
