Spicy Cucumbers with Jalapeño Recipe

Spicy Cucumbers with Jalapeño

A little spicy, a little vinegary, and a lotta crunch.

The perfect dish to brighten the palette. I love these cucumbers served on rice in combination with a hearty umami dish. Feel free to adjust the spice level to your preference.


Ingredients

4 cloves of garlic

salt

2 tablespoons rice vinegar

1 tablespoon toasted sesame oil

2 cups cucumber

2 tablespoons jalapeño | thinly sliced *adjust for taste

salt

pepper

2 teaspoons red chile oil

cilantro | roughly chopped


Instructions

Step 1

Pound the garlic and salt together until you have made a rough paste.

Step 2

In a bowl, combine the garlic paste, rice vinegar, and toasted sesame oil. Let this sit for a few minutes to infuse.

Step 3

Toss in the cucumbers and jalapeños and season with salt and pepper.

Step 4

Drizzle with the red chile oil, top with the cilantro leaves, and serve immediately. Enjoy.
