Grilled Cabbage with Spicy Thai Dressing

The first time I had grilled cabbage it was a revelation. I was completely caught off guard by how delicious it was. The simple cabbage, elevated to a nutty, smoky, still slightly crunchy experience. Good ol’ Kenji nailed this combination of the cabbage and spicy Thai dressing - it is delicious. I highly recommend giving it a go.


Ingredients

3 tablespoons fresh juice from 4 to 6 limes | divided

3 tablespoons fish sauce

3 tablespoons palm or light brown sugar

3 medium cloves garlic | finely minced

2 teaspoons Thai chilies | minced, more or less to taste

2 tablespoons fresh Thai basil | roughly chopped

2 tablespoons fresh mint leaves | roughly chopped

2 tablespoons fresh cilantro leaves | roughly chopped

1 medium head green cabbage | cut into 6 wedges, with core left intact

2 tablespoons extra-virgin olive oil

Kosher salt and freshly ground black pepper
