Compound Butter

Your instant level-up cooking trick to impress just about anyone.

So this is not a recipe. This is an invitation to get creative. I usually have a couple of versions of compound butter in the freezer, and when I need them, they are there, patiently waiting to be used. I just slice off as much as I need and then pop them back in the freezer for another dish another day.


Ingredients

1/2 pound unsalted butter | room temperature

+ any ingredients that inspire you


Directions

Step 1

In a bowl, fold and mash all of your ingredients together.

Step 2

Chill the butter in the fridge for at least 1 hour to firm it up and to let the flavors permeate.

Step 3

Use and enjoy.


Storage

Spoon the butter mixture in a line on a sheet of parchment or waxed paper and roll into a tight cylinder, folding the ends in tightly. Wrap in plastic wrap, or drop into a freezer bag. Freeze until ready to use. Slice off as much as you need, and then return to the freezer.

Inspiration for Use

  • To baste a roast chicken

  • Swirl into soup
