Fall Apple Shrub Recipe

Fall Apple Shrub

A simple evocation of autumn

Almost like an apple pie in a glass—perfectly refreshing on a crisp fall day spent raking leaves.


Ingredients

3 medium apples | quartered, core and all

1 cup apple cider vinegar

1/2 turbinado sugar

2 cinnamon sticks

1/2 a nutmeg | cracked in half

5 allspice berries


Instructions

Step 1

Shred the apples using either a box grater or a food processor.

Step 2

In a nonreactive container combine all of the ingredients, stirring until the sugar is dissolved. Cover and leave in a cool place for 2 days.

Step 3

When you are ready to strain, go ahead and place a fine-meshed strainer over a bowl. Strain the apple mixture, pressing down with a spoon to extract as much liquid as possible from the solids.

Step 4

Discard the solids and pour the shrub into a clean glass jar. Enjoy.
